The Spice Islands of Indonesia, which include the Banda Islands and Ternate and Tidore in Maluku, are home to cloves, nutmeg and mace. These remote islands became the centre of a lucrative international trade in these spices. They formed a magnet for explorers and traders who recognised the nutritious and medicinal powers of these simple foods. The pursuit of these commodities evoked curiosity, excitement and greed, changing the course of world geopolitics and shaping regional and world cuisine today.

In the first of three society events on the theme of spices, Petty Elliott, AIS Vice Chair, chef and author; Rahel Stephanie, chef and founder of Spoons London, an Indonesian plant-based supper club; and Eleanor Ford, a multi-award winning author, food journalist and chef, were in conversation with Dr Lesley Pullen, AIS Programme Coordinator.

They swapped anecdotes and share their respective journeys in raising interest in the ancient spice trade routes and the many connections that resulted in the shaping of modern food culture in Indonesia and worldwide. These humble spices connect us all through food!

This presentation was followed at 7.45 pm by a special 3-course dinner designed by Petty Elliot at a cost @ £25 per person including wine.

Sup labu panggang, jahe dan santan
Roasted butternut squash, ginger, coconut soup
(Vegetarian, suitable for vegan)

Main
Daging Semur, Kari Sayuran, dengan Nasi Jaha
Braised beef with spices, herbs, sweet soya and mixed vegetable curry served with coconut infused with coconut milk, lemongrass and lime leaves
Vegetarian (suitable for vegans): 
Gluten Free Tempe Semur, Kari Sayuran dengan Nasi Jaha
Braised with spices, herbs, and sweet soya served with coconut rice infused with  lemongrass and lime leaves

Dessert
Buah Pir rebus dengan rempah, disajikan dengan saos coklat dan remah
Almond poached pear with spices, chocolate ganache and almond crumble

Speaker Biographies

Rahel Stephanie, founder of Spoons, her sell-out plant-based Indonesian supper club in London which she started in 2019. Inspired by authentic regional dishes across the streets and homes of her home country and the Indonesian ‘aunties’ of YouTube, Rahel is on a mission to bring true Indonesian cuisine to the world. She has collaborates with several leading UK hospitality establishments and her media appearances include Sunday Brunch on Channel 4. 
Petty Elliott, chef, food consultant, philanthropist, and author of several books, including Jakarta Bites. Her new book The Indonesian Table is due out in late March.  Petty was invited to cook for the spouses’ lunch programme during last year’s G20 summit in Bali.  Petty was a judge for Indonesia in both Asia’s 50 best & World’s 50 best restaurants and has made guest chef appearances in some of the world’s leading resorts.  She has been UK based for the past five years.

Eleanor Ford is a multi-award-winning author, food journalist and cook who loves to travel. She is also a recipe developer and food stylist. She collects evocative recipes from around the globe. She is also a judge on the Great Taste Award and the Academy of Chocolate.  Her third and latest book, The Nutmeg Trail, was awarded two Gourmand World Cookbook Awards 2023.
